Market magic, The Pink elephant way

OUR Evolved Offering

As the long, golden days of summer begin their slow fade into the crisp embrace of autumn, there’s a certain magic that seems to hang in the air. It’s the time when festivals linger in the evenings, laughter drifts from open-air theatres, and the smell of fresh food fills the streets. This year, St. Albans is a little brighter, a little more vibrant, thanks to the colourful presence of Pink Elephants – and we couldn’t be more thrilled to share what we’ve been cooking up.

This past week marked an exciting milestone for us: the launch of our very first market stalls, right here in St. Albans. Every Wednesday and Saturday, our pink gazebo now stands proudly among the hustle and bustle of the town, a beacon for those seeking fresh, healthy, and utterly delicious food. But the market isn’t just a showcase of our food – it’s an invitation to the community to experience The Pink Elephant at its best, to meet the people behind the plates, and to see how our offerings can bring a little magic to any event.

Salads, Filos & quiches

Our salads are as diverse as they are delicious. Imagine a hearty buckwheat and chickpea salad, perfectly textured and packed with earthy flavours, or a giant couscous salad bursting with sun-dried tomatoes and a fresh lemon dressing. For those who love a classic Mediterranean twist, there’s the feta salad with cucumbers, tomatoes, and onions, or a refreshing potato salad with a tangy mustard dressing. Each one is designed to be more than just a side – they’re mini-feasts in their own right, vibrant, nourishing, and perfect for those still lingering in the summer sun.

For pastry lovers, we’ve introduced an array of quiches and filo pastry pies that are almost too beautiful to eat (but, of course, impossible not to). Our quiches range from vegetable medleys to combinations featuring goat cheese, beetroot, spinach, and feta, capturing the essence of fresh, seasonal ingredients. And then there’s our filo pastry pies – crisp, golden layers that encase a world of flavour. Sliced into generous squares, these pies are as satisfying to the eye as they are to the taste buds, offering a delicate crunch that gives way to rich, fresh fillings.

OUR PINK GAZEBO

All of this culinary creativity is just a taste of what The Pink Elephant can offer. Beyond the market, we bring this same passion and attention to detail to picnic parties, private events, weddings, corporate gatherings, and festivals. Whether it’s a small gathering in a Hertfordshire garden or a large-scale festival in London, our goal is always the same: to create memorable, delicious experiences that leave our clients and their guests smiling.

Running the market stall with charm, dedication, and infectious enthusiasm are Tom and Ollie, who have been instrumental in getting our new venture off the ground. Their energy, knowledge, and warm engagement with customers have already made the stall a local favourite. And, of course, our pink gazebo makes us impossible to miss – a symbol of fun, friendliness, and food that’s as vibrant as it is delicious.

TEXTILES FROM OUR RANGE

But we’re not stopping at food. At the market, you’ll also find a selection of our textile range, including beautifully designed napkins in three different patterns. This is part of our wider vision: The Pink Elephant isn’t just about meals; it’s about creating a complete experience, blending culinary excellence with thoughtful, stylish accessories that bring an extra touch to every gathering.

Looking ahead, we have autumn and festive markets lined up, not just in Hertfordshire, but in surrounding counties and London itself. Each market is a chance to share our passion, receive feedback from our clients, and expand The Pink Elephant experience further. And while we’re always excited to bring our standard favourites – like the newly launched Graze on-the-go, a perfect little box of charcuterie for anyone in need of a quick pick-me-up – these markets allow us to showcase the full breadth of what we can do.

Our philosophy is simple: food should be fresh, exciting, and enjoyable, and our clients’ experiences should feel personal and memorable. Every salad we prepare, every filo pie we slice, and every textile we design is created with this in mind. And in these last days of summer, there’s something uniquely satisfying about seeing our vision come to life amidst the laughter of market-goers, the hum of festival preparations, and the golden light of St. Albans.

We know that our journey is just beginning. This season, and moving into 2026, The Pink Elephant is committed to innovation, creativity, and, above all, connection. Every market, festival, and event is an opportunity to bring people together over food that delights the senses, sparks conversation, and leaves a lasting impression.

So, whether you’re stopping by for a quick Graze on-the-go box, a fresh salad, a layered filo pastry slice, or even a piece of our textile range, we welcome you. Chat with us about how we can enhance your next event, offer ideas for corporate catering, or simply delight your taste buds on a Wednesday or Saturday in St. Albans.

And as the Roman Theatre’s final festival days unfold, and the sun dips lower in the sky, remember this: summer may be ending, but the celebration of flavour, creativity, and The Pink Elephant magic is just getting started. Keep an eye out for our pink gazebo, a little pop of colour and joy, and know that whatever your taste, there’s a little something waiting just for you.

After all, as we like to say, the world is full of ordinary flavours – but sometimes, all it takes is The Pink Elephant to make your summer unforgettable.
